River Rose Venison

Ingredients
 1 cup Diced tomatoes
 1 cup River Rose Gin
 ½ cup Minced shallot [about 4 shallots]
 3 Crushed juniper berries
  tsp Ground pepper
 1 tbsp Minced fresh ginger
 ¼ cup Dijon mustard
 ¼ cup Olive oil
 1 tbsp Fresh lemon juice
 2 Venison loins [you can substitute any wild game or fowl]

Cook the loins covered in oil salt and pepper

Stir together the sauce ingredients and cook until the shallots are cooked

Serve the roast venison with the sauce
