Caldo de Camerones (Shrimp Soup)

Ingredients
 1 medium sweet onion diced
 1 yellow pepper diced
 ½ cup diced celery
 ¼ cup minced fresh cilantro
  cup olive oil
 2 cloves minced garlic
 2 cups diced tomatoes with juice
 1 qt shrimp stock, seafood stock or clam juice
 1 ½ lbs chopped large shrimp or small salad shrimp
 ½ cup River Baron Artisan Spirit
 1 tsp ground cumin
 A few dashes of Tabasco Green or red
Directions

Sauté the onion, yellow peppers, celery, and garlic in the oil and add the cilantro.

Stir in the spices and then add the stock and tomatoes.

Stir in the shrimp so as to not overcook them.

Put the River Baron in the soup and remove from heat.

Adjust seasonings and add some lime juice.
