Chai Concentrate

Ingredients
 4.50 qts Hot Water
 10 cinnamon sticks bashed up
 10 g ground ginger
 4 g cardamom
 7 g whole star anise
 3 g whole cloves
 19 g whole black peppercorn
 5 g nutmeg powder
 24 g orange zest
 75 g black tea (preferably Assam)
 0.50 lb (226 grams) Demerara sugar
 0.25 cup honey
 0.25 cup vanilla extract

In a large pot, toast spices over medium heat for a few minutes until fragrant but before they are smoking.

After the spices are toasted add HOT water and black tea.

Steep and simmer over heat for 30 minutes making sure not to boil. Reduce heat as necessary to avoid boiling.

Fine-strain tea into a large container. Add brown sugar, honey, and vanilla while still HOT and stir until sugar and honey are melted.

Let cool.

Once cooled stir again to combine any ingredients that may have settled and funnel into bottles. Makes (4) 750ml bottles.
