It’s that time of year… SINGLE BARREL TIME! We take our pick of the best barrels in the barrel room and set them out at barrel proof, one barrel at a time. This year, for the first time, we bottled single barrel rye!
These high proof expressions push the oak to the forefront and even at high proof, are crystal clean and smooth.
They also showcase a unique approach we take to barrel aging… our low barrel entry proof. Most American whiskey is aged at the legal maximum of 125 proof and then water is added after aging to bring the alcohol content down for bottling. This takes less space to age whiskey when you have millions of barrels in aging. But as a small company, we have more leeway in this respect. Our bourbon goes into the barrel at 110 proof and rye goes in at 96. We lose a little alcohol during the aging process and come out at 105 and 92 respectively. The sugars in the oak dissolve better in water than in alcohol. So we’ve found this gives us a nice balance and our smooth flavor.
